Our Chef, Guillaume Dallay
Guillaume Dallay was born in Loches and so is originally from the region. He began at Château d'Artigny, under the rule of Francis Maignaut, and then continued from Alain Senderens to Lucas Carton. He joined the Choiseul team in 1999 and has had many roles there, including that of pastry chef before officially being appointed Chef de cuisine at the beginning of 2006.
He describes himself as an "artist for the table". He likes to surprise by using and enhancing simple produce. His cuisine charms novices and gourmets alike.
